Bramble Baking Co. was founded by Allie Smith, an artist and educator turned obsessive pie maker. The project began as a weekend-only endeavor to bake the perfect pie and learn about Maryland's seasonal produce, and has slowly grown along with enduring support from family, friends, and neighbors.
Though the project is constantly evolving, a commitment to crafting flavor-forward treats with local and high-quality ingredients remains constant. Nontraditional flavor combinations change frequently to celebrate the seasons, so you can be sure your are receiving the freshest pie or cake. Each pie crust is rolled and sculpted by hand, and our buttercream cakes are decorated with herbs, naturally-dyed sprinkles, handmade candies, and/or fresh edible flowers grown by farmers in the Baltimore-area.

Watercolor Cookie Painting Workshop

Join me for an introduction to painting with edible watercolor on shortbread and sugar cookies. We will focus on greenery, florals, and options for hand lettering, but all levels of watercoloring experience are welcome to experiment with this edible medium. Take home a tin of six customized cookies to admire (and eat if desired!) and gain the skills to keep practicing on cookie canvases.

Q: Where can I find your baked goods? How do I place an order?
A: We are not a brick-and-mortar bakery, so we operate through pop-ups and special orders. Special order requests for pickup or delivery (for a small fee) are always welcome. Please send a message including the date of pickup, menu preferences (flavor, size, and decoration preferences), and the number of people you’re serving and we will coordinate with you via email to customize if available for the date! Please note that we are currently booking mid-June and later.
Q: When is your next market?
We will do our best to keep the above “Upcoming Pop-ups and Events” section as up-to-date as possible. While we work on growing our wholesale and market side of things, Instagram is by far the best way to stay in the loop with goings on as we grow the project.
Q: Do you have vegan or gluten-free options?
A: Some, but not all, of our pies and cakes can be made vegan or dairy-free by request. While some of our items are naturally gluten-free, we don’t have access to a gluten-free kitchen and do not currently offer any gluten-free cakes.
Q: What kind of ingredients do you use?
A: An important part of this project is a continual commitment to learning about and supporting local and organic sources for our ingredients. It makes a huge difference in the final product, and is the reason this whole endeavor started in the first place. This applies to both produce and staples like dairy, flour, and sugars. We are constantly striving to balance the costs of running a small operation with sourcing sustainably, with many ingredients sourced from local farmer's markets. We also incorporate freshly milled flours from our home mill when possible.
